First, brown the ribs. Sauté ginger, onion, and garlic for 2 minutes. Add curry and pour in water. Cook for 1 minute. Then add coconut milk, sugar, and fish sauce to the mixture and simmer on low heat for 3 minutes. Pour the prepared sauce over the ribs. Cook in a pressure cooker for 1 to 2 hours. Transfer the ribs to a serving plate. Drizzle with sauce and add lemon juice with a bit of zest. |

For the risotto: 1 cup of rice, 1 cup of dry white wine (Klein Viognier), 4 cups of chicken broth, a pinch of saffron, 2 tablespoons of cream, 3 tablespoons of chopped onion, 2 tablespoons of oil, Parmesan cheese, salt and pepper to taste. |
