Cut the mushrooms into large pieces. Keep in mind that during frying, the sliced mushrooms will lose about half their volume, so it's better to cut them large. If you cut them too small, you'll end up with mushroom puree after frying! | |
Slice the onion into half-rings. Heat vegetable oil in a pan and sauté the onion for about 3-4 minutes. | |
Don't forget to stir the frying onion to prevent it from burning. Once it turns golden, you can add the mushroom slices. | |
Transfer the mushrooms to the pan, add salt and pepper. Gently mix. The salt will help the mushrooms release juices and cook faster. They first need to be slightly stewed in the resulting liquid. After the liquid evaporates, the mushrooms will start to fry and develop a golden crust. | |
The mushrooms will be ready when their color changes and their taste and aroma become pronounced. Keep in mind that at this point, they might get a bit burnt, so stir them occasionally. | |
Transfer the fried mushrooms to a plate, garnish with fresh herbs, and serve with toasted bread slices, croutons, or pâté. |
