Chicken Roast with Vegetables

  • Chicken (2 legs and 2 breasts) 1.5 Kilograms
  • Red Potatoes 500 Grams
  • Carrots 450 Grams
  • Fennel 450 Grams
  • Thyme (chopped) 2 Teaspoons
  • Salt (to taste) 1 Piece
  • Pepper (to taste) 1 Piece
  • Olive Oil 3 Tbl. spoons
  • Salt (for brine) 1/2 Cup
  • Sugar (for brine) 1/2 Cup
  • Water (for brine) 1 Liter

kurinoe_jarkoe_s_ovoshami-1539.jpgFor the marinade: dissolve salt and sugar in water. Place the pieces of chicken in a deep dish and pour the entire salt mixture over them. Cover and leave in the refrigerator for 30-60 minutes.
