For the shiitake salad: Ingredients: 1/2 ounce of sliced shiitake mushrooms, 1 carrot (grated), 1/2 red onion (chopped), 2 bok choy leaves (chopped), 1/4 cup of rice, 2 tablespoons of wine vinegar, 1 tablespoon of soy sauce. Mix all ingredients and chill in the refrigerator. Carefully place the salad in the center of the plate and drizzle with wasabi sauce.
