For convenience, all the ingredients needed to make the dressing are shown. | |
Take a deep bowl where we will prepare the dressing and add the anchovies. | |
Using the back of a spoon or fork, mash the anchovies to a paste-like consistency. | |
Add the previously minced garlic (I use a garlic press) and two egg yolks. | |
Add lemon juice and mustard. | |
Add vinegar (I use balsamic, but any type will do) and whisk the mixture until smooth. | |
Gradually add the oil in a thin stream, continuing to whisk. | |
It's better to add olive oil in small portions rather than all at once. Add some, whisk until smooth; if the dressing is not thick enough, add more oil. | |
Continue to add oil in a thin stream, whisking until the dressing reaches the desired thickness. | |
When the dressing reaches the desired consistency, stop whisking. | |
Add salt, pepper, and cheese, thoroughly mixing all the ingredients. | |
The dressing is ready. Now it needs to be chilled (I put it in the refrigerator for at least 30 minutes), after which it can be used to dress the Caesar salad. Enjoy your meal! :) |

- Dijon mustard 1-2 Tbsp
