Caesar Dressing

  • Garlic 2-3 Cloves
  • Lemon 1 Piece
  • Anchovy fillet 3-4 Pieces
  • Hard cheese 1/4 Cup
  • Dijon mustard 1-2 Tbsp
  • Olive oil 1 Cup
  • Egg yolk 2 Pieces
  • Salt and pepper - To taste
  • Vinegar 2 Tsp

sous_quotcezarquot-44724.JPGUsing the back of a spoon or fork, mash the anchovies to a paste-like consistency.
sous_quotcezarquot-44725.JPGAdd the previously minced garlic (I use a garlic press) and two egg yolks.

sous_quotcezarquot-44727.JPGAdd vinegar (I use balsamic, but any type will do) and whisk the mixture until smooth.

sous_quotcezarquot-44729.JPGIt's better to add olive oil in small portions rather than all at once. Add some, whisk until smooth; if the dressing is not thick enough, add more oil.
