  • Salmon fillet 500 Grams
  • White fish fillet (such as pike perch, sole, or flounder) 300 Grams
  • Milk 100 Milliliters
  • Flour 2 Tablespoons
  • Egg (separated into white and yolk) 1 Piece

  • Cream 300 Milliliters
  • Grated nutmeg 1 Pinch
  • Green beans 500 Grams
  • Egg yolk 1 Piece
  • Breadcrumbs 1 Tablespoon
  • Salt and pepper (to taste) 1 Piece

Gradually pour in the warm milk and softened butter, thoroughly mixing the batter with a whisk. Switch to a saucepan and, whisking continuously, warm over low heat until the mixture begins to pull away from the sides.

ribnii_rulet_so_shpinatnoi_nachinkoi-3072.jpgBlanch the green beans in boiling salted water for a few minutes. Transfer to a colander, then mash into a puree. Mix with the yolk, breadcrumbs, and 2 tablespoons of the fish puree. Stir and chill in the refrigerator for about 30 minutes.
